Sorpotel Paste: A ready to use paste for making one of Goa's favorite Pork dishes.
Sorpotel Recipe:
Boil 1 kg of Pork meat with the heart and liver in full pieces. Then cool and cut into small cubes. Fry in a pan without using any oil till the meat turns brown. Add 2 tbs ginger garlic paste, 2 fried onions & 2 green chilies to the paste and fry well. Add fried pieces of meat. Add salt as per your requirement. Cook on a slow fire till the meat is tender. Sorpotel tastes best 2 days after being cooked. (In Goa we joke that Sorpotel tastes best when accidently discovered in the fridge after a year).
