Mackerel Pará is a traditional Goan way of conserving fish for the rainy season when fish is not easily available.
It is spiced by a variety of spices such as red chillies, ginger, garlic, pepper, cloves and cinnamon. Toddy vinegar is the preservative.
The Mackerels need to be shallow fried in oil and served with rice.
